Winemaking
- Aged for a minimum of 6 years and 3 months in 228-liter barrels after selective sorting of our best Savagnin barrels.
- No topping-up or racking during the entire ageing period.
- Creation of a yeast veil to protect the wine from oxidation and bring out all its powerful aromas.
- During this prolonged ageing period, part of the wine evaporates, reducing the initial volume from 100cl to 62cl, hence the Clavelin bottle format.
