Winemaking
- Fermentation lasts ten days, with precise temperature control.
- After fermentation, Savagnin and Chardonnay are aged separately in 228-liter barrels for a minimum of two years.
- The Savagnin is traditionally aged without topping up in barrels destined for the production of Jaune. After selective sorting, the barrels are racked for our Tradition cuvée.
- At the same time, the Chardonnay is aged in barrels to allow its roundness to express itself.
- The final blend is made before bottling.
Wine tasting
- Intense yellow color with silver highlights.
- On the nose, harmonious aromas of fresh hazelnuts, white-skinned fruit and buttery notes.
- On the palate, a perfect balance of the two grape varieties, combining the roundness and elegance of Chardonnay with the acidity of Savagnin.
- Over the years, this wine intensifies both in color and aromatic profile. It has good ageing potential, but can also be enjoyed young.
Food and wine pairing
- This blend is the perfect accompaniment to regional cheeses, from the mildest to the strongest.
- It also goes well with white meats with cream sauce, mushrooms, exotic dishes and river fish such as trout.
- Recommended serving temperature: 13°C.
