Winemaking
- Fermentation lasts ten days, with precise temperature control.
- After fermentation, the Savagnin is racked into 228-liter barrels initially intended for the production of Vin Jaune. Selective sorting is carried out before bottling.
- Savagnin is matured for a minimum of 3 years, without topping up or under-filling.
Tasting
- An intense yellow color with golden highlights, promising great intensity.
- On the nose, aromas of walnut, hazelnut and white-skinned fruit mingle with a hint of spice.
- On the palate, this wine’s fine acidity powerfully conveys all the aromatic complexity perceived on the nose.
- Over the years, this wine will intensify both in color and aromatic profile, making it an excellent wine for laying down.
Food and wine pairing
- Savagnin goes perfectly with all types of cheese, whether regional, milder or stronger.
- It also goes well with white meats with cream sauce, mushrooms or exotic dishes.
- An excellent match with river fish such as trout.
