Winemaking
- Hand-picked after careful selection of the best bunches from different parts of the vineyard.
- The grapes are harvested in crates to preserve their integrity.
- The grapes are dried in a ventilated barn.
- Pressing takes place a few months after harvest, depending on the degree of drying of the bunches.
- Concentration is such that for every 100 kg of grapes, we obtain only 15 to 18 liters of juice after drying.
- Slow fermentation followed by barrel ageing for at least 3 years.
Wine tasting
- Golden yellow with amber highlights.
- On the nose, an intense bouquet with aromas of dried fruit, fruit jelly and caramel. A powerful, fruity complexity emanates from this wine.
- On the palate, the wine is full-bodied and impressively complex. The balance between alcohol, acidity and sugar is perfect. Vin de paille is an excellent wine for laying down.
Food and wine pairing
- Vin de paille goes perfectly with foie gras, but also as a dessert wine with chocolate and other sweet dishes.
- Recommended serving temperature: 8°C.
