Winemaking
- Hand-harvested at cool temperatures, followed by de-stemming and crushing of the grapes as soon as they arrive at the winery.
- Cold pellicular maceration for a few days before fermentation, to extract the fruitiness characteristic of Pinot Noir.
- Fermentation and maceration last a fortnight, with daily pumping over and occasional punching of the cap to obtain a wine with good structure.
- Precise temperature control and management.
Aged for 12 months in stainless steel vats, followed by bottling.
Wine tasting
- Ruby-red in color, with intense tannins.
- On the nose, a very fruity, aromatic bouquet of blackberry and black cherry.
- On the palate, a wine focused on fruit, greedy and with supple tannins promising a pleasant body.
- The aromas, identical to those on the nose, are enhanced by a subtle touch of spice.
Food and wine pairing
- Perfect with red meats, grilled meats and game.
- Excellent with cheese and smoked charcuterie.
- Also great with grilled tuna.
- Recommended serving temperature: 16°C.
